Chive Frittatas with smoked salmon

CHIVE FRITTATAS WITH SMOKED SALMON Makes 12

WHAT DO I NEED?6 eggs1 cup (8floz) single or pouring cream3/4 cup grated cheddar cheese2 1/2tbsp chopped chivessea salt and cracked black pepperTopping:1/2 cup sour cream (4floz)80g (2 3/4oz) cream cheese, softened2tbsp lemon juice50g (1 3/4oz) sliced smoked salmonsnipped chives, extra, to garnishWHAT SHOULD I DO?Preheat the oven to 160C/320F. Place the eggs, cream, cheddar, chives, salt and pepper in a bowl and mix to combine. Pour into 12 x 4floz capacity greased muffin tins and bake for 15 minutes or until set.

Remove from the tins and cool slightly. To serve, combine the sour cream, cream cheese and lemon juice in a bowl and place a teaspoonful on top of each frittata. Top with a small piece of smoked salmon and garnish with the extra chives.
